Zucchini with Lemon
Perfect for Low Carb menus
1 1/4 pounds zucchini ( 2 medium)
trimmed and cut lengthwise into
1/4 inch thick slices
2 tbsp olive oil
2 cloves garlic, finely chopped
1 tsp finely chopped fresh rosemary
or 1/2 tsp dried
1/2 tsp cracked black pepper
1/4 tsp salt
Lemon wedges, for garnish
Preheat boiler. Arrange zucchini slices in single
layer in jelly roll pan. Overlapping slices to fit
if necessary. Combine olive oil, garlic, rosemary,
and cracked pepper in measuring cup. Brush
zucchini slices with olive oil mixture. Broil 6 inches
from heat for 5-6 minutes or until tender. Sprinkle zucchini with
salt Arrange zucchini slices on platter. Serve with lemon wedges.
