Whole Lobster Baked in Paper

1 to 1 1/2 pound lobster

4 oz good Chardonnay wine

1/2 oz fresh lemon basil

1 tbsp vegetable oil

1 size 20 brown paper bag

1 small loaf pan or small steel bowl,
just large enough to hold lobster

With pastry brush, brush entire outside of paper bag with oil. Put

wine and lemon basil in loaf pan. Kill lobster by plunging knife into

head area from underside. Place lobster in loaf pan, then pan into oiled

bag and fold open edges under. The weight of the pan will hold the edges.

Set bag on small sheet pan and bake in 400 degree oven for 18-20- minutes.

Remove from oven. Split bag and place lobster on cutting board. Split tail

and crack claws with heavy knife. Pour juices from loaf pan over lobster.

Serve with melted butter.
