Sweet Watermelon Pickle

2 lbs watermelon rind, cut into small pieces

1/4 cup salt

4 cups sugar

2 cups vinegar

1/4 cup pickling spices

4 oz jar maraschino cherries, drained

Day before, put watermelon rind in a large bowl; cover with 1 quart of water.

Add salt. Let stand overnight. Next day, drain rind; put in a large pot. Cover

with fresh; bring to a boil; then simmer for 30 minutes, or until tender. Drain;

set aside. In another large pot combine sugar, vinegar, 2 cups water and

pickling spices tied in a cheesecloth bag. Bring to a boil, stirring occasionally.

Add watermelon rind; simmer until clear and transparent. Add cherries; simmer

for 5 minutes longer. Remove spices and pour into sterilized jars and seal at once.
