Sweet Onion Casserole
Variation # 1
10 0z bag potato chips, crushed
4 medium onions, sliced in rings
2 cups shredded cheddar cheese
2 cans cream of mushroom soup
1/2 cup milk
salt and pepper to taste
Grease a 9 x 13 inch baking pan. Mix mushroom soup and milk, until
well blended. Put half of the onions in the baking dish. Top with half of the cheese
and half on the potato chips. Add another layer of onions, cheese and chips. Pour
soup over everything. Bake at 350 degrees for 1 hour
I make this recipe each year as soon as I see the Vadalia onions in the
supermarket. I like to reduce the sodium by using low sodium cream
of mushroom soup. I also use low fat cheddar cheese.
