Sourdough Bread

1 cup milk, scalded

1/4 cup butter

1/4 cup sugar

1 1/2 tsp salt

2 tsp baking soda

2 cups sourdough starter

5-7 cups flour

Stir butter, sugar and salt into scalded milk. When it is lukewarm,

add the sourdough starter. Mix soda in a little warm water and stir into

the milk mixture. Add flour until dough can be kneaded well. Place in

a greased bowl and let rise. This can be overnight, all day, but at least

for 3 hours. Punch down and shape into loaves. Let rise again, until doubled.

Bake 30 minutes in a preheated 400 degree oven, for a small loaf.
