Scandinavian Cobb Salad
Perfect for Low Carb menus
12 slices bacon
Green leaf lettuce
1 lb skinless, boneless, chicken breasts
cook, chilled and cut into julienne strips
6 oz blue cheese, cut in chunks
2 large tomatoes cut into wedges
3 hard boiled eggs, sliced
2 avocado, peeled, seeded and sliced
Dressing to follow
Fry bacon until crisp; drain on paper towels and
while slices are still warm, cut into 2 inch pieces.
Line large platter with lettuce leaves. Arrange chicken
bacon, blue cheese, tomatoes, eggs and avocado
in rows on top of lettuce. Cover and chill. Prepare
dressing.
DRESSING
In blender; place 1 cup olive oil, 1/3 cup tarragon flavored vinegar; 1 clove
garlic, pressed, 2 tbsp chopped green onions, 1 tsp paprika. Cover and
whirl until well blended. Season to taste with salt and pepper. Transfer
dressing to serving dish.
