SAUSAGE FRITTATA
1/2 lb sausage, crumbled into small pieces
1/2 cup coarsely chopped green pepper
1/2 cup coarsely chopped onion
1 clove garlic, minced
1/2 tsp dried thyme, crushed
1/2 tsp salt
8 eggs, slightly beaten
2 medium tomatoes, sliced
1/2 cup shredded Swiss cheese
Preheat oven to 450 degrees. In a 12 inch nonstick skillet, brown sausage over medium heat. Add green pepper, onion and garlic and cook until green pepper is tender. Stir in thyme and salt.
Add eggs and cook until almost set, about 4 minutes.
Arrange tomatoes on top and sprinkle with cheese. Wrap handle with foil. Bake until set, about 5 minutes.
This is not just for breakfast. Served with a salad, this is a great pizza substitute.
