Roast Wild Duck with Apples
1 medium wild duck
Poultry seasonings
Onion Slices
Apple Wedges
1 carrot, diced
1 stalk celery, diced
Sliced bacon
Lemon juice
Worcestershire sauce
Preheat oven to 500 degrees. Rub duck inside and out with poultry
seasoning; stuff with onion, apple carrot and celery. Place,
breast up on a rack in a roasting pan. Arrange bacon on breast and legs.
Baste with lemon juice and Worcestershire. Roast in a preheated
oven for 30 minutes.
