Roast Leg of Lamb
3 tbsp olive oil
1 tbsp salt
2 tsp dry mustard
1 clove garlic, crushed
1/4 tsp pepper
1 tbsp flour
6 lb leg of lamb
Preheat oven to 500 degrees. In small bowl blend all ingredients
except lamb. Wipe lamb; arrange on rack in roasting pan.
Spread seasonings on lamb. Roast in preheated oven for 30 minutes.
Turn temperature to 350 degrees. Roast for 1 1/2 to 2 hours for well done,
or until done to taste.
