Roasted Parmesan Potatoes
4 medium russet potatoes, peeled
1 tbsp vegetable oil
3 tbsp grated parmesan cheese
2 tbsp chopped parsley
1 tsp paprika
1/2 tsp garlic powder
1 tsp salt
1/8 tsp cayenne pepper
Preheat oven to 450 degrees. Line a baking sheet with aluminum foil and spray with vegetable cooking spray.
Slice potatoes in half then cut into 1/2 inch cubes. Place potatoes in a medium bowl and toss with vegetable
oil. In a small bowl, combine Parmesan cheese, parsley, paprika, garlic powder, salt and cayenne pepper.
Add the parmesan mixture to potatoes. Toss to coat potatoes evenly with Parmesan mixture. Arrange
potatoes on prepared baking sheet. Bake for 25-30 minutes, turning once, until potatoes are lightly golden
brown and easily pierced with a knife.
Great served for dinner, left leftovers are equally great served at breakfast with any egg dish.
