Roast Cornish Hen
The Cornish Hen is a hybrid chicken, younger than other
chickens. Here, each half is a serving, so ask your butcher
to split them for you.
Rice pilaf (recipe follows)
3 1lb Cornish hens, split
1/4 cup brandy
1 tsp sage or poultry seasonings
salt and pepper to taste
Spread rice pilaf in a 9 x 13 inch baking pan; top with game hens.
Pour on brandy and sprinkle with seasonings.
Roast, uncovered at 350 degrees for 50-60 minutes, or until game hens are done.
