Potato and Cabbage Slaw

1 1/4 lb red potatoes

1 small head green cabbage
about 1 1/2 lbs

2 tbsp sugar

2 tbsp chopped parsley

3 tbsp orange juice

1 tbsp red wine vinegar

1 tbsp olive oil

1 1/2 tsp salt

1/4 tsp coarsely ground black pepper

Boil potatoes in a large pan until fork tender.

Cool potatoes thoroughly. Shred the cabbage

Combine all other ingredients in a medium bowl.

Pour the dressing over the cabbage and toss lightly

to coat. Cut the potatoes into bite size pieces. Add

to cabbage and toss again lightly.
