Pineapple Pickles
12 cups cubed pineapple or two medium pineapples
2 1/2 cups white vinegar
4 cups sugar
2 cups water
2 tbsp cloves
2 cinnamon sticks
If fresh pineapple is used, peel and cut crosswise into 1 inch slices.
Remove core; cut into sections about 1 inch wide. In a large pot combine
vinegar, sugar and water. Bring to a boil. Tie spices in a cheesecloth bag.
Add to vinegar mix. Simmer for 15 minutes. Add pineapple; cover; simmer
for 30 minutes, or until tender. Remove spice bag; pour pineapple into hot
sterilized jars. Pour syrup over them and seal at once.
