Pineapple Nut Bread
1 1/3 cups presifted flour
2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
3/4 cup sugar
3 tbsp butter
2 eggs
3/4 cup chopped nuts
8 1/2 oz can or 1 cup crushed pineapple, undrained
2 tbsp sugar
1/2 tsp cinnamon
Preheat oven to 350 degrees. Grease a 9 1/2 inch loaf pan. Combine flour,
baking powder, salt and baking soda. In a mixing bowl gradually beat 3/4 cup
sugar into butter. Add eggs, one at a time, beating after each addition until
smooth. Sift in about half the flour mixture. Stir (do not beat) just until dry
ingredients are moistened. Add pineapple. Then stir in remaining flour mixture.
Spoon batter into the pan. Combine 2 tbsp sugar and cinnamon.
Sprinkle over batter. Bake in preheated oven for 60-70 minutes.
