Pickled Beets

Young small beets

2 cups sugar

2 cups water

2 cups cider vinegar

1 tsp cloves

1 tsp whole allspice

1 lemon, thinly sliced

1 tbsp broken cinnamon stick

Wash beets; simmer in water to cover for 30 minutes, or until tender. Drain,

drop into cold water, trim off tops and slip out of skins. Pack beets in hot

sterilized jars. Combine remaining ingredients in saucepan. Bring to a boil;

then simmer for 15 minutes; pour into hot sterilized jars; seal at once.
