Peanut Brittle
Still a family favorite at the holidays
I have listed two similar recipes below

Dixie Peanut Brittle
2 cups granulated sugar
1 cup light corn syrup
1/2 cup water
1/2 tsp salt
3 cups shelled peanuts
2 tbsp butter
2 tsp baking soda
Heat sugar, syrup, water and salt to a full boil in a heavy saucepan.
Add peanuts. Reduce heat to medium and stir constantly. Cook to brittle stage
(293 degrees Fahrenheit). Add butter; then baking soda. Beat rapidly
and pour onto a buttered surface, spreading to 1/4 inch thickness.
Store in an airtight container. Yields about 2 pounds.
Reduce the fat in this recipe by using low or not fat butter
substitue. Save on sugar calories by substituting SPLENDA brand sugar
substitute for the 2 cups granulated sugar.

Microwave Peanut Brittle
1 cup shelled peanuts
1 cup granulated sugar
1/2 cup light corn syrup
1/8 tsp slat
1 tsp butter
1 tsp vanilla extract
1 tsp baking soda
Mix together first four ingredients in a two quart casserole dish. Cook in
microwave for about 4 minutes; stir well; then add butter and vanilla extract.
Return to microwave and cook for another 3-4 minutes. Then add baking
soda and stir gently until foamy. Pour onto a lightly greased cookie sheet.
Cook 1/2 to 1 hour at 300 degrees, or until candy looks brittle. When cool,
break into small pieces and store in an airtight container. Makes about one
pound. Again save fat and sugar calories by substituting low or no fat butter
substitutes and SPLENDA brand sugar substitute for the granulated sugar.
