Orange Baked Apples
6-8 medium, cooking apples (Rome Beauty,
Granny Smith or jonathan)
2/3 cup sugar
1/3 cup all purpose flour
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/3 cup butter
1/3 tbsp orange peel, finely chopped
1/2 cup orange juice
1 tsp vanilla extract
Preheat oven to 350 degrees. Lightly butter 13x9 baking pan. Peel and core apples. Place apples in the prepared pan.
In medium bowl, combine sugar, flour, cinnamon and nutmeg. With pastry blender, cut in butter until mixture resembles coarse crumbs; add orange peel, stirring well. spoon into centers of apples. Sprinkle with remaining crumb mixture over apples.
Combine orange juice and 1/4 cup water. Pour over apples. Bake 40-50 minutes or until tender.
To reduce the calories, use SPLENDA brand sugar substitute.
