My Stuffed Clams
2 cups finely minced clams
1/2 cup minced onion
1/3 cup minced green pepper
1/3 cup minced celery
1-1 1/3 cup dry French bread crumbs
1 cup heavy cream
2 beaten eggs
2 tsp melted butter
2 tsp dry mustard
1 1/2 tsp salt
1 tsp pepper
Combine all the ingredients and stir well. Scoop back into clam shells.
Bake 20 minutes in a 350 degree oven. Remove and sprinkle heavily with
grated Parmesan cheese. Place 1/2 strip bacon on top of each shell and
heat until bacon is crisp. Makes 8-10 servings. Can be baked in dishes
other than clam shells, but they are much better in the shells.
