Mint Jelly

1/2 cup fresh mint leaves

1 1/4 cups boiling water

2 tbsp lemon juice

3 cups sugar

3 oz liquid pectin

Few drops of green food coloring

Put leaves in bowl; cover with water. Add lemon juice; let stand for 1 hour.

Strain, pouring liquid into a large pot. Add sugar; cook over medium heat,

stirring until sugar is dissolved. Bring to a full rolling boil; pour in pectin.

Bring back to a boil; boil for 30 seconds. pour into hot sterilized jars; seal at once.
