Macaroon Cookie Bars
CRUST
1 pkg devil's food cake mix
1/2 cup butter or margarine, softened
1 1/2 cups granulated sugar
1 egg
TOPPING
14 oz can sweetened condensed milk
1 tsp vanilla
1 egg
1 1/4 cup flaked coconut
1 cup chopped nuts
Preheat oven to 350 degrees. Grease a 13 x 9 baking pan. In a large bowl, combine crust ingredients.
Mix at low speed until well combined; mixture will be crumbly. Press evenly into bottom of greased pan.
In a small bowl, combine condensed milk, vanilla and egg. beat until smooth.
Stip in 1 cup coconut and nuts. pour mixture over crust. Sprinkle remaining 1/4 cup coconut over top.
Bake for 30-35 minutes or until golden brown. Cool completely Cut into bars. 36 Bars..
Note: reduce the sugar in this recipe by substituting Splenda brand sugar substitute cup for cup.
You can also reduce the fat by replacing butter or margarine with a low or no fat butter substitute.
