Light and Spicy Spinach Salad
3 tbsp soy sauce
3 tbsp cider vinegar
1 tbsp vegetable oil
1 tsp lemon juice
1/4 tsp prepared mustard
Coarse ground black pepper to taste
1 cup water chestnuts, drained and sliced
4 scallions, sliced thin
1 cup fresh mushrooms, sliced
1/2 cup grated parmesan cheese
1 can (3 oz) chow mein noodles
In covered jar, combine first seven ingredients an shake
until thoroughly mixed. In large bowl, combine remaining
four ingredients and toss with salad dressing.
Sprinkle with grated cheese and chow mein.
Serves 4-6
