Lamb Burgers with Pine Nuts
1 lb ground lean lamb
1 medium onion, finely chopped
1 tsp salt
1/4 tsp pepper
1/4 cup Pignolia (pine) nuts
1/4 cup chopped parsley
1 tsp dried mint
12 oz can tomato puree
Preheat oven to 350 degrees. Grease an 8 inch square pan. Melt butter in a small
skillet; brown nuts; set aside. Combine lamb, parsley, onion, mint, salt and
pepper; mix well. Shape into round flat patties; press nuts into center of
each patty. Put in pan; top with tomato puree. Bake in preheated oven for 35 minutes.
