Italian Chicken and Rice
1 1/2 cups water
1 cup uncooked rice
1 can 14 oz whole tomatoes, undrained and cut up
1/2 lb cheese spread, cubed
1/2 cup finely chopped onion
2 tsp Italian seasoning
1/4 tsp garlic powder
1 (2 1/2 - 3 lb) broiler chicken, cut into 8 pieces
2/3 cup grated parmesan cheese
Preheat oven to 375 degrees. In a greased 13x9 glass pan mix together the water,
rice, tomatoes, cheese spread, onion, 1 tsp Italian seasoning and garlic powder.
Top mixture with chicken pieces and sprinkle with Parmesan cheese and remaining Italian seasoning.
Bake for 50-60 minutes or until chicken is tender. Remove from oven and let stand for 5-10 minutes before serving.
I have prepared this recipe using a large package of chicken thighs and it is wonderful and very inexpensive.
It will be healthier using brown rice.
