How to cook beans
Dried beans
are less expensive than canned. To cook dried
beans, simply cover beans with
water overnight. The next day
drain the water from the beans. Add twice the
water to the amount
of beans to be cooked. Cook on high open flame until they
begin
to boil. Lower flame to a simmer and cook until beans are soft.
Taste a few to make sure they are done all the way through.
A quicker method
is to put the peas or beans in a kettle with water
to cover; bring to a boil;
boil rapidly for 2 minutes. Remove from heat;
cover; let soak for 1 hour.
Then proceed to cook as directed by the recipe.
My husband likes them
plain like this. I prefer to simmer them with
a ham bone, pieces of fried
bacon or even a beef bone.
