Hot and Sweet Shrimp
2 cups roasted chile salsa
1 1/2 tbsp cider vinegar
1 tbsp honey
1 lb shrimp, peeled, deveined
1 tbsp chopped parsley
1 tbsp chopped red onion
Combine salsa, vinegar and honey in a saucepan. Simmer
for 3 minutes. Add shrimp and simmer until the shrimp
are cooked, about 3 minutes. Spoon shrimp into a bowl and
decorate with parsley and red onion.
