Homemade Sausage Patties

6 pounds lean sausage

3 pounds fat pork

1/4 cup sage

2 tbsp pepper

2 tbsp salt

2 tsp ground cloves

2 tsp mace

1 nutmeg, grated

Put pork through fine blade of meat grinder twice. Put meat in mixing bowl;

add remaining ingredients. Knead well with hands to blend spices thoroughly.

Shape into 36 patties. Fry at once or freeze. Try using ground venison,

instead of the ground pork.
