Heart
Another variety meat of merit and taste is the wild game heart.
To prepare for cooking, wash thoroughly, remove all tough membranes
and all traces of blood. Heart can be baked, fried or boiled.
Prepare as you would a beef heart. A recipe for baking wild game heart is:
Salt heart well inside and out. Stuff with favorite dressing if desired.
Place in a baking pan and cover. BAke at 350 degrees for 2 hours
or until tender.
