Shark Steak with Tangerine Butter
2 (5 oz) shark steaks ( 1/2 inch thick)
2 tbsp chopped fresh parsley
2 tbsp butter, softened
1 tbsp chopped tangerine pulp
Spray grill with non stick cooking spray; turn heat
to medium high. Mix together butter, parsley and tangerine pulp.
Refrigerate. Grill shark steaks for about 1 minute; rotate a quarter
turn and grill a minute more for nice crisscross markings.
Turn steaks over and grill for 2-3 minutes more or until fish flakes
with a fork. Place on a serving dish; top with a dollop of tangerine
butter. Serves 2
