Grilled Mahi-Mahi
1/4 cup lime juice
3 tbsp olive oil, divided
3 tbsp chopped shallots, divided
1/2 tsp salt
1/2 tsp freshly ground pepper
4 (6 oz) mahi mahi fillets
1 (14.5 oz) can diced tomatoes
1 (11 oz) can corn, drained
1 (15 oz) can white or cannellini beans, drained and rinsed
1/4 cup freshly chopped basil
Coat grill with nonstick cooking spray. Preheat grill to medium high. Combine
lime juice, 2 tbsp olive oil, 2 tbsp shallots, salt and pepper in a small bowl.
Drizzle over fish. Grill fish, covered with grill lid, 4-6 minutes or until fish flakes
with a fork. Saute remaining 1 tbsp shallots in remaining oil in a large saute pan
over medium high heat. Add tomatoes and bring to a boil. Add corn and beans;
reduce heat and simmer 10 minutes until heated through. Stir in basil and cook
1 minute more. Serve fish on top of sauce. Serves 4
