Grilled Calamari Salad

1/4 cup fresh lemon juice

1 tbsp Dijon mustard

1 tbsp olive oil

2 cloves garlic, minced

1 tbsp chopped fresh parsley

1 tbsp chopped fresh basil

1/2 tsp salt, divided

1/2 tsp freshly ground pepper, divided

4 cups mixed salad greens

1 yellow bell pepper, seeded and chopped

1 1/2 cup grated carrots

2 lbs calamari

Coat grill rack with non stick cooking spray. Preheat grill to

medium high. For dressing, whisk together lemon juice, mustard,

olive oil, garlic, parsley, basil and 1/4 tsp salt and pepper in a

small bowl; set aside.

Combine greens, bell pepper and carrots in a large serving bowl; set

aside. Thread calamari on each of 4 (8 inch) skewers and season

with remaining salt and pepper. Grill calamari 1-2 minutes on each side.

Serve over mixed greens and top with dressing.
