Grilled Artichokes

2 fresh artichokes

4 tbsp lemon juice, divided

1 1/2 tsp grated lemon peel

3 tbsp olive oil

1/2 tsp seasoned salt

1 clove garlic, minced

Trim stem and top quarter of artichokes. Snip sharp points from ends

of leaves; discard. Cut artichokes lengthwise into 6 wedges. Place

wedges in microwave safe 2 quart casserole with 3 tbsp lemon juice

and 1/4 cup water; toss to coat artichokes. Cover and microwave at

HIGH power for 5 minutes or just until artichokes are tender, stirring

once. Drain and pat dry. To prepare marinade, blend remaining 1 tbsp

lemon juice, lemon peel, olive oil, seasoned salt and garlic in a small

bowl. Drizzle over artichokes; toss to coat well. Let stand at room

temperature 1 hour; (If desired, artichokes can be covered and refrigerated

overnight, stirring occasionally.) Coat grill rack or basket with nonstick cooking

spray. Preheat grill to medium direct heat. Place artichoke wedges in grill

basket, directly on grill or thread on 4 skewers (6-10 inches long). Brush with

additional marinade. Grill covered 4-8 minutes or until lightly charred and heated

through, turning once. Serves 4
