2 eggs
1 cup sugar
2 tbsp vegetable oil
1 cup milk
3-4 cups flour
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1 tsp salt
4 tsp baking powder
In a large bowl beat sugar, eggs and vegetable oil until light and lemony in color. In a
smaller bowl mix the flour, spices, salt and baking powder. Pour small amounts of the
flour mixture into the egg mixture, while pouring in small amounts of milk, stirring
constantly until mixed. Repeat mixing the flour mixture and milk into the egg mixture,
ending with the flour until the mixture is the consistency of dough. Roll out on a floured
surface. Roll to 1/4-1/2 inch thick. Cut with donut cutter or water glass (using a soda cap
to cut out the center hole). Fry in hot oil until golden brown, turning once to brown on
all sides. Remix the scraps until all the dough is used.
