Getting Ready to Cook
*** Baking is an exact science, so be sure to measure
your ingredients correctly. For flour, spoon lightly into a
measuring cup, then level with a knife or straight edge.
***Use a glass or plastic measuring cup with a spout
for liquids.
***If separating eggs, do so while they are still cold, it
will be much easier.
***Before beginning any recipe, bring all ingredients to room
temperature.
***It is best if you place each item on a sheet of waxed paper
or in small bowls. This way you can be sure that you have not missed
anything, if you get interrupted.
***Unless otherwise instructed, use unsalted butter, large eggs and whole milk.
***Heat oven 15 minutes before baking, and double check the temperature
of your
oven with a thermometer.
