Cranberry Salsa

6 oz can frozen orange juice
concentrate, thawed, undiluted

1 cup fresh cranberries

2 yellow or red bell peppers, chopped

1 red or yellow chili peppers, with or
without seeds. Chopped (optional)

1 red onion, chopped

1 clove garlic, finely chopped

1/2 cup loosely packed cilantro

1 tbsp cumin seeds or
1/4 tsp ground cumin

Combine all ingredients and chop coarsely by hand

or in a food processor fitted with steel blade. Divide

among jars and store in refrigerator.

Makes approximately 3 1/2 cups.
