Corned Beef Brisket with Horseradish Sour Cream

 

1 large sweet onion, such as Bermuda, Maui, or Spanish, sliced

1 corned beef brisket ( 3- 31/2 lbs )

3/4 tsp crushed red pepper flakes

1 cup reduced sodium chicken broth

1 tbsp Worcestershire Sauce

1/2 cup sour cream

1 tbsp cream style prepared horseradish

2 tbsp chopped fresh parsley

Spray a 5-6 quart slow cooker with cooking spray. Place onions in cooker. Remove

beef from package; discard liquid and seasoning packet. Thoroughly rinse beef.

Place beef on the onion; sprinkle with red pepper flakes. In a small bowl; mix

broth and Worcestershire sauce; pour over beef.

Cover; cook on Low heat setting 8-9hours.

In a small bowl, stir sour cream horseradish and parsley until well mixed. Serve with beef

and onion.

 

Serve this traditional Irish dinner with steamed green cabbage and carrots.
