Citrus Marinated Chicken

1 cup orange juice

1/4 cup lemon juice

1/4 cup lime juice

2 cloves garlic, pressed or minced

4 boneless, skinless chicken breast halves

Salt and Pepper

Citrus Tarragon Butter

Hot cooked couscous with green
onion slices and slivered almonds (optional)

lemon and lime slices and Italian parsley for garnish

CITRUS TARRAGON BUTTER

1/2 cup butter softened

1 tsp each grated lemon and orange peel

1 tbsp each lemon and orange juice

1 tbsp finely chopped fresh tarragon

Beat butter in a small bowl until soft and light. Stir in remaining Citrus Tarragon
Butter ingredients. Cover and refrigerate ;until ready to serve. Makes about 1/2 cup

Combine orange, lemon and lime juices and garlic in a shallow glass dish or large heavy

plastic bag. Add chicken; cover dish or close bag. Marinate in refrigerator for no more

than 2 hours. (Lemon and lime juices will "cook" the chicken if it's left in too long).

Remove chicken from marinade; discard marinade. Season chicken with salt and pepper.

Oil hot barbecue grill rack to help prevent sticking. Grill chicken , on a covered grill,

over medium heat 6-8 minutes until chicken is cooked through, turning once.

Serve with a dollop of Citrus Tarragon Butter. Serves 4
