Chicken L'Orange

3 pounds boneless chicken breasts

1/4 cup butter

2 tsp flour

2 tbsp sugar

1/2 to 1 tsp cinnamon

Dash of ginger

1 1/2 cup orange juice

1/2 cup raisins

Sprinkle chicken with salt. Brown in butter in a heavy skillet. Remove

chicken. Add flour, sugar and spices to drippings. Mix to a paste.

Add orange juice and cook, stirring until thickened.

Add chicken and raisins. Simmer over low heat for 25-30 minutes.

Serve over hot, cooked rice. Add orange sections, if desired.
