Chicken and Crab Valentine
3 cups cooked chicken, cut in bite size pieces
2 cups crab meat
8 slices bacon
2 boxes frozen peas
Sauce:
6 tbsp butter
6 tbsp flour
1 1/2 cups chicken broth
1 1/2 tsp salt
3/4 tsp paprika
1 clove garlic, crushed
1/8 tsp nutmeg
2 1/4 cup sour cream
For the sauce: Melt butter in top of a double boiler. Stir in flour and add broth. Cook and stir until smooth and thickened. Add salt, paprika, garlic, nutmeg and a dash of cayenne pepper. Cover and cook 10-15 minutes, stirring occasionally. Add sour cream, mix well and continue heating over just simmering water. Add chicken meat and crab meat. Mix lightly. Heat 15 minutes. Fry bacon until crisp. Drain on paper towels and crumble. Cook peas according to package directions until just tender. Drain well. Add bacon to chicken, crab mixture. Transfer contents of double boiler to serving dish. Arrange peas around edge of dish.
