Zesty Carrot Casserole
4 1/2 cups carrot slices
fresh or canned
1/2 cup mayonnaise
2 Tbs chopped onion
2 Tbs prepared horseradish
1/4 tsp salt (if desired
dash pepper
1/4 cup crushed saltine crackers or bread crumbs
2 tsp butter or margarine melted
Cook fresh carrots until tender. Drain and place in casserole dish.
Combine horseradish, mayonnaise, salt and pepper.
Spoon mixture over carrots. Mix crumbs and butter and sprinkle
on top. Bank uncovered in a 350 oven 30 minutes or until hot.
Makes 4-6 servings
