Beet and Cabbage Relish
4 cups finely chopped, cooked beets
4 cups finely chopped cabbage
1/2 cup grated horseradish
1 tsp salt
1/8 tsp pepper
2 cups sugar
1 cup cider vinegar
1 cup water
Put beets, cabbage and horseradish in a mixing bowl. Sprinkle
with salt and pepper; toss lighty to mix. In a saucepan, combine
sugar, vinegar and water. Cook over medium heat, stirring occasionally,
until sugar is dissolved Bring to a boil; pour over vegetables; mix.
Pour into sterilized jars and seal at once.
