Beef A La Mode
3-4 lb eye of the round roast
2 cups red burgundy wine
1 can condensed beef consommé
2 medium onions, sliced thin
2 bay leaves
1/2 tsp oregano
1/4 tsp pepper
1 tsp salt
1/2 tsp celery seed
Mix together all ingredients and pour over eye of round roast in a bowl, just large enough
to hold it. Cover and refrigerate 10-12 hours, turning meat several times. Remove meat
and reserve marinade. Brown meat in shortening on all sides. Add marinade; cover and
bring to a boil. Place in 350 oven for 2 1/2 hours or until tender. Strain gravy and thicken.
