Banana Nut Cake
1 1/3 cups oil
2 cups sugar
1 tsp baking powder
1 tsp baking soda
1 tsp salt
4 eggs slightly beaten
1 1/2 tsp vanilla
3 cups flour
1 tsp cinnamon
1 tsp nutmeg
1 1/2 cup chopped walnuts
1 (8 oz) can crushed pineapple, drained
1 1/2 cups mashed ripe bananas
1 1/2 cups confectioners' sugar
In a mixing bowl, combine dry ingredients. Beat in eggs, oil and vanilla. Fold
in pineapple, bnanas and nuts. Pour into a well greased 10 inch tube pan.
Bake in a preheated 350 degree oven for 60-65 minutes. Cool in pan 15 minutes.
Dust with confectioners' sugar when cooled.
