Baked Spiced Squash
3 cups cooked winter squash
2 tsp butter or margarine
1/4 cup brown sugar
2 egg whites, beaten slightly
1 tsp cinnamon
1/3 cup herbed croutons, coarsely crushed
Preheat oven to 400 degrees Combine squash, egg whites, sugar, butter and cinnamon. Mix well.
Pour into 1 quart baking dish sprayed with nonstick cooking spray. Bake 20-25 minutes
or until center is set. Remove from oven; sprinkle crushed croutons on top.
Bake 5-7 minutes longer or until croutons are browned. Makes 6-8 servings.
You can reduce the fat in this recipe by replacing butter or margarine with a low or no fat substitutes
and lower the carbohydrates by using SPLENDA brand brown sugar substitute.
