Asian Grilled Tilapia

1/4 cup soy sauce

2 tbsp sugar

3 large cloves garlic, minced (feel free to add
more depending on your love of garlic)

Juice of 1 lime

1 tsp minced fresh grated ginger (you can also
feel free to increase this if you love ginger)

1/4 tsp crushed red pepper flakes, or 1/2 minced
serrano chili

1 lb tilapia fillets (or other thin, mild white fish)

Combine soy sauce, sugar, garlic, lime juice, ginger

and red pepper flakes in wide, shallow baking pan that will hold

fish in a single layer. Stir briefly to dissolve sugar. Add tilapia, then

turn it over so it's coated on both sides. Set aside for 20 minutes.

Heat broiler to high, and move oven rack to position closest to heat.

Slide the pan into the oven, and broil the fish five minutes. Keep the oven

door ajar so the broiler element stays lit. Turn the pan around and

broil five minutes more. If the juices in the pan appear to burn, add a little water

to the dry spot to prevent burning. Fish should be opaque and flaky. Serve with

baked butternut squash and rice mixed with greens or peas, if desired.

Note: reduce the sugar in this recipe by substituting Splenda brand brown sugar substitute.

You can also reduce the fat by using a low or no fat cream cheese.
